I'm pretty sure that this IS the perfect cheesecake. I don't really like cheesecake. It never tastes good to me. And that 'factory' has too many flavors that don't taste like what I think cheesecake should taste like. My husband is Italian and loves cheesecake so I thought I would give the "Perfect Cheesecake' a try. Well, it was hard to make but sooo delicious. So very delicious; with chocolate or raspberry sauce or without.
I bought a spring form pan for the occasion - pack of 3 for almost nothing at Ross. Happy. :) But as usual I didn't read the directions all the way through and didn't realize there was a 'water bath' involved. I looked for a silicone encasement to put the pan in but couldn't find one so I took a deep breath and wrapped the bottom of the pan in four layers of aluminum foil. The recipe says to use three but I was scared so I went with more is better. I went slowly, putting the pan in the water bath and miracle of all miracles no water got in and it turned out delish. I highly recommend this recipe.
Tip: Follow the directions and read this and pretty much all recipes all the way through before you begin.
